Restaurateurs Bob and Chris Fahey have teamed up with executive chef Sam Byrne to create a made-from-scratch menu inspired by 19th-century America. Try the confit pork Wellington appetizer, wrapped in a bacon pastry with mustard, arugula and fennel, and then perhaps order the roasted halibut, which is accompanied with seared foie gras, parsley puree, oxtail and Madeira ragu. But make sure to leave room for dessert and enjoy, say, the crème brûlée with a gingerbread donut.
