The sun is setting later, the snow is finally gone and crocuses are poking up in our gardens—the season of renewal and new beginnings is at last upon us. But spring’s slow start might mean the season’s holidays snuck up on you—Passover begins this Wednesday, April 1, and Easter is on Sunday, April 5.

If they did, don’t worry! There’s time to plan and create a fantastic spread for your family get-togethers. Central to these dinners is, traditionally, a magnificent roast—usually lamb or ham for Easter and brisket or chicken for Passover.
