Jersey City’s long-standing Brownstone Diner & Pancake Factory has a new sibling—the Brownstone Pancake Factory in Edgewater. Owned by Chef Bobby Bournias and designed by his wife, Vanessa DeLeon, the 150-seat restaurant is a treat for both the eyes and the stomach.
Imagine a juice bar designed to look like an outdoor park, real brick facades on the walls, custom garden murals, nostalgic newspaper clippings as wallpaper and an overall “upside down” theme—faux grass on the ceiling, a 3D blue sky on the floor.
Then there’s the food: nearly 30 different varieties of fluffy buttermilk pancakes (the recipe is a family secret); signature pancake wraps stuffed with eggs, bacon, cheese and other goodies; and two dozen types of colossal omelets. There are lunch and dinner items too—wraps, salads, burgers, paninis, quesadillas—but for us breakfast is the real draw. And you can order it all day!
